Cut roast into 4 pieces. Place into crock pot. Add next 4 ingredients and sprinkle with pepper on top. Cook in crock pot 5-6 hours. When meat has finished cooking remove and shred. Return meat to crock pot on warm and cook for 1 hour longer. Cool mixture and divide into meal size potions and freeze.
When ready to eat. Thaw meat and reheat. Top French rolls with Italian beef and a slice of Provolone cheese. Place under broiler until cheese melts. Serve.

I love the Don't Panic cookbook too. It's my favorite freezer cookbook at my library. Maybe I should ask for it or their new one for Christmas.
This looks so good. I really like to try recipes when I can see what they look like first! Anyone else? I do a modified Italian Beef recipe…
3 Lb beef roast
1/4 cup brown sugar
24 oz bottle Italian Dressing
Put it all in the crock pot and cook 6-8 hours. About 1 hr before serving, remove beef from the crock pot and shred it. Put shredded beef back into crock pot and mix in 2 Tbsp Italian seasonings. Simmer and serve on buns, hoagie buns, or any bread you have in the house. Sometimes I add onions or cheese if its on hand. Whatever I have left, I freeze for another meal. This usually makes at least 2 meals for my family of 5.
what type of roast do you use?
Jennifer, What ever I can find a deal on. I like roast with very little fat.
