Pumpkin Chocolate Chip Muffins/Loaf

This is one of my favorite muffin recipes. I had planned on freezing the loaf but my little boy and I ate all of it in 2 days. Oh well, I guess I will have to make a double batch next time.


1 2/3 cups flour (I used 1 cup white and 2/3 cup wheat)
1 cup sugar
1 T pumpkin pie spice
1 t baking soda
1/4 t baking powder
pinch of salt
2 eggs
1 cup pumpkin
1/2 cup melted butter
1 cup chocolate chips

Preheat oven to 350 degrees. Mix dry ingredients in one bowl and set aside. In another bowl mix wet ingredients and add chocolate chips. Add wet ingredients to dry and mix gently. Do not over mix. Grease muffin pan or loaf pan and full 2/3 full. Bake 20-25 min for muffins or 40-45 min for loaf.

These are so good! I hope you like them. They do freeze well.
